Ingredients

  • 2.5 Qt (10 cups) water

  • 8-9 fresh eggs

  • 5-6 celery sticks, diced

  • ¼ cup red onion, diced

  • ¼ cup homemade mayonnaise

  • 1 tbsp Dijon or whole grain mustard

  • ½ tsp paprika

  • ½ lemon, juiced

  • Salt and pepper


Steps

  1. Add water to a large pot or Dutch oven and place on the stove over high heat until boiling

  2. Gently add eggs into water and boil for 9 minutes

  3. While the eggs are boiling, fill a mixing bowl with cold water and add some ice, creating an ice bath

  4. Once the 9 minutes is up, immediately remove the eggs and place directly into the ice bath. Let sit for at least a minute

  5. Remove the eggs from the ice bath and peel. Place peeled eggs into another mixing bowl.

  6. Using a potato masher, mash the eggs to your desired consistency. They should have a nice medium-boiled yolk.

  7. The eggs may still be warm. At this point I’ll put the mixing bowl with the eggs in the freezer while I dice the vegetables.

  8. Add the rest of the ingredients into the bowl with the eggs and combine

  9. Taste and adjust for seasoning/mayo/mustard.

  10. Place on your favorite bread with your favorite toppings and enjoy 😊
