

Ingredients
2.5 Qt (10 cups) water
8-9 fresh eggs
5-6 celery sticks, diced
¼ cup red onion, diced
¼ cup homemade mayonnaise
1 tbsp Dijon or whole grain mustard
½ tsp paprika
½ lemon, juiced
Salt and pepper
Steps
Add water to a large pot or Dutch oven and place on the stove over high heat until boiling
Gently add eggs into water and boil for 9 minutes
While the eggs are boiling, fill a mixing bowl with cold water and add some ice, creating an ice bath
Once the 9 minutes is up, immediately remove the eggs and place directly into the ice bath. Let sit for at least a minute
Remove the eggs from the ice bath and peel. Place peeled eggs into another mixing bowl.
Using a potato masher, mash the eggs to your desired consistency. They should have a nice medium-boiled yolk.
The eggs may still be warm. At this point I’ll put the mixing bowl with the eggs in the freezer while I dice the vegetables.
Add the rest of the ingredients into the bowl with the eggs and combine
Taste and adjust for seasoning/mayo/mustard.
