

Ingredients
3 eggs
1-2 tbsp butter
Salt/ fresh-cracked pepper
Fresh chives
Steps
Add the eggs into a bowl, break each yolk with a fork and mix vigorously with a fork or whisk for ~45 sec to a minute. Let sit for at least 5 minutes, at most ½ hour.
Set a non-stick pan on medium low heat. Once hot, add butter.
Once butter is melted, add eggs and begin stirring immediately. Add a touch of salt and pepper and continue stirring often.
Once the eggs start to solidify, take them off heat and continue stirring often. After a minute or so, add them back to the heat and continue stirring often.*
Repeat step 4 every couple minutes until the eggs reach your desired consistency. This process of on the heat and off the heat lessens the chance of the eggs over-cooking.
Turn off the heat around 30 seconds before your desired consistency. They will continue to cook once off the heat.
Serve immediately with fresh chives and fresh cracked pepper
*If you want to add shredded cheese, sautéed mushrooms, fresh spinach, etc., wait until the eggs can move to one side of the pan without liquid spilling back over to the other side
